Prepare ingredients: cut spare ribs into 1 to 1.5-inch pieces and pat dry with paper towels, then season with salt and black pepper. Finely mince the onion, ginger, and garlic.

Press the sauté button on the instant pot and heat the cooking oil. Sear the spare ribs in batches on both sides until golden brown and charred, allowing the meat to release naturally once a crust forms.

Transfer the seared ribs to a plate. Add the minced onion to the pot and coat with oil, then deglaze the bottom of the pot with ¼ cup sake using a wooden spoon.

Add the grated ginger and minced garlic, stirring to combine. Return the spare ribs to the pot and add the sugar.

Add the mirin and rice vinegar, then the soy sauce and honey. Mix all ingredients together well.

Switch to high-pressure cooking mode and cook for 20 minutes under high pressure.

Allow the pressure to release naturally for 30 minutes. Open the lid and gently stir the ingredients.
