A stunning savory cake made with very thinly sliced courgettes combined with a simple egg and cream batter. Once baked, the vegetables meld into the batter, creating an incredibly soft and silky texture somewhere between a savory custard and a vegetable cake. Serve hot, warm, or cold.

Rinse the courgettes thoroughly under running water. Using a mandoline or a very sharp knife, slice the courgettes into very thin slices about 2 mm thick. Aim for uniform, nearly transparent slices to achieve the invisible cake effect.

Crack 4 eggs into a large bowl. Add the liquid cream, 3 tablespoons olive oil, 2 tablespoons grated Parmesan, salt, black pepper, and Herbes de Provence. Whisk together until combined.

Add the 125g wheat flour and mix until smooth with no lumps, achieving a thick pancake batter consistency.

Gently fold the sliced courgettes into the batter, carefully coating each slice thoroughly with the egg mixture using a spatula.

Preheat the oven to 180°C. Prepare an 18–20 cm round cake tin lined with baking paper (lightly dampen the paper to help it adhere). Pour the courgette mixture into the tin spoon by spoon, gently spreading it evenly so the slices are well distributed.

Sprinkle a thin layer of grated Parmesan or fleur de sel over the top. Bake in the preheated oven at 180°C for 45 minutes in a conventional oven, or at 170°C in bake mode for about 35 minutes in an air fryer.

Once baked, allow the cake to cool in the tin for a few minutes. Use the baking paper to help unmold it easily. Serve warm or let it cool completely before slicing for cleaner, more defined slices.
