Prepare all vegetables by chopping the onions into large pieces, mincing the garlic, cutting the scallions, and dicing the jalapeños, Cubanelle peppers, and bell peppers appropriately.

Combine the chili seasoning by mixing together cayenne pepper, oregano, cumin, paprika, and garlic powder in the amounts specified.

Heat olive oil in a pot over medium-high heat, add the onions, and season with salt and pepper. Cook until the onions soften and become translucent.

Add the minced garlic, then add both the sweet and hot Italian sausage (removed from casings), breaking them up as they cook. Then add the ground beef, stirring and cooking until all meat is browned.

Add most of the prepared seasoning mixture and dried hot peppers to the browned meat. Stir well to distribute the spices evenly.

Add the bell peppers and allow them to cook for about 1-2 minutes to begin softening.

Add the Cubanelle peppers and jalapeños with more of the remaining seasoning, salt, and pepper. Mixing in spices gradually creates a more complex flavor profile. Stir everything together.

If using fresh basil, add it now or reserve some for garnish.

Pour in the beer and let it simmer with the meat and vegetables for about 5 minutes to infuse flavor and add liquid.

Add the peeled tomatoes and tomato puree, stirring well to combine all ingredients.

Drain and rinse all three types of beans. Optionally lightly crush some of the beans to help thicken the chili and absorb sauce. Add the beans and corn to the pot and stir.

Simmer the chili for at least 1 hour, stirring occasionally to prevent burning. The sauce will thicken and flavors will meld together. You can cook longer if desired, but monitor that there is enough liquid remaining.

Ladle the chili into bowls and serve. Optionally pair with cooked rice or toasted bread, and garnish with shredded Provolone cheese, fresh basil, and parsley.
