Peel and core the apple. Peel the shallot and crush and peel the garlic cloves. Add the apple, shallot, garlic, and ginger into a blender.

Add the soy sauce, rice vinegar, cane sugar, and sesame paste to the blender. Pour in the avocado oil and blend on medium-high speed for a few seconds until well combined.

Transfer the dressing to a bottle or airtight container and refrigerate. The dressing will keep for 1 to 2 weeks. If it separates in the fridge, simply shake well before using.
