Japanese-Style Pork Steak with Garlic Chips

A Japanese-style garlic pork steak set meal that combines the essence of garlic and ginger-grilled flavors. Tender and juicy pork paired with a fresh vegetable salad and creamy potato soup creates a multi-layered Japanese teishoku experience.

Thinly slice the cherry tomatoes and cut the onion against the grain into thin strips. Spread the onion out for about an hour to let its pungency evaporate while keeping its nutrients.

Make the salad dressing by mixing mirin, sugar, salt, black pepper, rice vinegar, Dijon mustard and lemon juice, then whisk in the olive oil for a light dressing.

Prepare the pork: trim the sinew near the white fat on the edges, snipping it with the tip of the knife on both sides so the meat won't curl or shrink when cooked.

Slice the garlic into even, thin pieces so it cooks evenly later.

Combine the sake, mirin, sugar, soy sauce, oyster sauce and ginger paste to make the marinade/sauce (doubled here for two pieces of pork).

Dice the potato and soak briefly in water to remove excess starch; cut the onion into pieces for the soup.

Melt butter in a pot over medium heat, then sauté the onion until translucent to bring out its sweetness.

Add the drained potato with a little salt and pepper, stir to coat, then pour in the chicken stock and milk. Add rosemary and simmer to your preferred consistency, finishing with salt and pepper to taste.

In a separate pan, heat oil and add the garlic slices separately so they don't stick, frying over low heat while stirring constantly until golden and crisp. Remove and drain on paper towels, keeping the fragrant garlic oil.

Season the pork with salt and pepper only right before cooking to prevent it from releasing juices too early, then coat evenly with flour.

Preheat the pan, add the pork, making sure the oil spreads evenly underneath. Turn occasionally until both sides are golden brown; it doesn't need long cooking.

Wipe away excess oil from the pan, pour in the prepared sauce, and continue cooking until it reduces slightly and coats the pork, then turn off the heat.

Toss the prepared onion, cilantro and cherry tomatoes in a bowl with as much dressing as you like; optionally stir in a small extra knob of butter for richness to finish the side salad.
