Prepare the vegetables: finely slice the green onions and finely chop the carrot and onion. Use about 1 tablespoon of each vegetable.

Crack 4 to 6 eggs into a small bowl and beat them thoroughly.

Add the chopped vegetables, 1/4 teaspoon of salt, a pinch of sugar, and a pinch of white or black pepper to the beaten eggs. Mix well.

Add half a tablespoon of oil to a nonstick pan and spread it evenly with paper towels. Turn the heat to low.

Once the pan is hot, pour about one-third of the egg mixture and tilt the pan to spread it evenly. Cook for about 30 seconds until the bottom is set but the top is still slightly runny.

Using two regular spoons, gently push and roll up the egg from the edge. Once rolled, move it to the lower part of the pan.

Lightly coat the pan with oil again, pour in about one-third of the egg mixture, spread it evenly, and cook for about 30 seconds.

Using the spoons, gently roll up the omelet again. If it tears while rolling, you can pour a bit more egg mixture to patch it or keep rolling.

Repeat the rolling process one more time until all the egg mixture is used and you have a nice block of rolled egg.

Lightly sear each side of the rolled omelet for about 30 seconds until it turns light golden brown.

Transfer the rolled omelet to a cutting board and let it rest for about 2 minutes before slicing to prevent it from falling apart.

Slice the omelet and transfer to a serving plate. Serve alongside hot rice and enjoy, optionally with ketchup.
