Ingredients
Cabbage (or napa cabbage)
finely shredded
8 oz
Ginger
sliced or julienned
~2-3 tbsp
est.
Pine nuts
~3 tbsp
est.
Water
1½ cups
Salt
2 tsp
Apple vinegar (or apple juice)
2 tbsp
Sugar
adjust to taste for sweet-tart balance
2 tbsp
Korean soy sauce
for seasoning leftover cabbage
~2 tbsp
est.
Minced garlic
~3-4 cloves
est.
Sesame oil
~1 tbsp
est.
Chopped green onion
~2 tbsp
est.
Steps

Shred the cabbage into fine strips; use about 8 oz for the pickle and set the rest aside.

Slice the ginger and prepare the pine nuts, then combine them with the shredded cabbage in a bowl.

Mix water, salt, apple vinegar (or apple juice), and sugar together to make the pickling liquid.

Pour the pickling liquid over the cabbage and let it sit until the color deepens and the flavor turns tangy and salty.

Taste and add a bit more sugar if needed to reach your preferred sweet-and-sour balance.

Chop and rinse the remaining cabbage, then steam it until tender.

Toss the steamed cabbage with Korean soy sauce, minced garlic, sesame oil, and chopped green onion to make a simple side dish.

Remove the pickled cabbage and plate it to serve; if using daikon or radish, cut into matchsticks and follow the same method.
