Korean Stir-Fried Fish Cakes (2 Ways)

A classic Korean side dish featuring two delicious versions: a savory soy sauce version and a spicy version. Fish cake (eomuk) is a beloved Korean ingredient that becomes an amazing dish with simple stir-frying. Both versions are easy to prepare, taste best when freshly made, and can be refrigerated for up to 5 days.

Cut 300g of Korean fish cakes into bite-sized pieces. You can cut them in half lengthwise and then into 1/2 inch pieces, or cut them into triangles or other shapes.

Thinly slice two green onions and separate the white and green parts. Thinly slice half an onion and the green and red chilies.

Make the soy sauce version: In a small container, mix 1.5 tbsp soy sauce, 0.5 tbsp oyster sauce, 0.5 tbsp minced garlic, 1 tbsp honey, 1 tsp sugar, 1 tbsp mirin, black pepper, and 2 tbsp water.

Heat 1 tbsp of oil in a large wok or pan over medium heat. Add the white parts of the green onions and onion slices, and sauté for about 1 minute until they start to soften and become fragrant.

Add the fish cake pieces and stir-fry for about 2 minutes. Fish cakes have some oil on their surface, so you don't need much additional oil.

Add the green and red chilies and the prepared sauce, then stir-fry for about 2 minutes until most of the liquid has evaporated and the fish cakes are lightly browned.

Turn off the heat and add the remaining green onion parts and 1 tsp of toasted sesame oil. Mix well and taste, adding more soy sauce if needed.

Transfer the soy sauce version to a serving plate and garnish generously with toasted sesame seeds.

Make the spicy version sauce: In a small container, mix 1.5 tbsp Korean chili pepper flakes, 1.5 tbsp soy sauce, 0.5 tbsp oyster sauce, 0.5 tbsp minced garlic, 1 tbsp honey, 1 tsp sugar, 1 tbsp mirin, black pepper, and 2 tbsp water. Use fine chili flakes for a more beautiful appearance, or coarse flakes work fine too.

Heat 1 tbsp of oil in a large wok or pan over medium heat. Add the white parts of the green onions and onion slices, and sauté for about 1 minute until softened.

Add the fish cake pieces and stir-fry for about 2 minutes until lightly browned. Then add the chilies and the prepared spicy sauce, and continue stir-frying for about 2 minutes until everything is evenly coated.

Turn off the heat, add the green onion parts and 1 tsp of toasted sesame oil, and mix well.

Transfer the spicy version to a serving plate and garnish generously with toasted sesame seeds. Serve and enjoy.
