Prepare the ingredients: cut 1 pound of zucchini into thin matchstick-like strips; thinly slice half an onion; slice 3 green onions, keeping the white and green parts separate; mince 3 garlic cloves.

Make the seasoning paste: combine 2 tablespoons Korean chili pepper flakes, 0.5 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 tablespoon mirin, 0.5 teaspoon sugar, 2 pinches of salt, and optionally a pinch of MSG in a small bowl.

Cook the noodles: add 2 servings of spaghetti to boiling water and cook according to package directions until perfectly done. Drain and transfer to a mixing bowl.

Season the noodles: add 1 tablespoon soy sauce and 1 tablespoon sesame oil to the cooked noodles and mix well.

Make the aromatic oil: heat 2 tablespoons of oil in a pan over medium-high heat. Add the onion, white parts of green onions, and garlic, and sauté for about 2 minutes until the onion softens and becomes translucent.

Stir-fry the zucchini: add all the zucchini strips and stir-fry for about 1 minute until well coated with the aromatic oil. Then add the seasoning paste and continue stir-frying for about 2 minutes until you see beautiful chili oil throughout.

Finish: turn off the heat and add 0.5 tablespoon sesame oil, mixing well.

Plate and serve: place the seasoned noodles on a serving plate, top generously with the zucchini stir fry, and garnish with sesame seeds and green onion greens.
