Cut chicken tenderloin into ~2 inch strips, soak in milk, and refrigerate for at least 30 minutes to tenderize and remove any gamey smell.

Make the sauce by combining corn syrup, sugar, soy sauce, apple cider vinegar, and yellow mustard, stirring until the sugar dissolves completely.

Prepare the ginger, garlic, and dried red peppers by slicing or mincing them.

Drain the milk-soaked chicken (keeping it slightly wet) and season with salt and black pepper.

Heat about 4 cups of oil to around 350°F (7-10 minutes), then fry the coated chicken in batches until golden and crispy, about 4 minutes per batch.

Once the oil reaches about 330°F again, double-fry all the chicken together for about 3 more minutes for extra crunch — the secret to Korean fried chicken.

Toss peanuts in the pan for about 10 seconds until crunchy, then remove.
