Prepare thinly sliced chicken breasts; if using whole breasts, pound them flat to about 1/4-inch thickness. Mix flour with garlic and herb seasoning, salt, and black pepper.

Coat both sides of chicken pieces with the seasoned flour mixture. Heat neutral oil in a large skillet over medium-high heat, then sear the chicken for about 3-4 minutes per side until golden brown. Transfer cooked chicken to a plate.

In the same skillet, melt butter with olive oil. Add minced shallot and garlic, sauté for about 2 minutes until fragrant. Stir in Calabrian chilies if desired for extra flavor.
