Cut the chicken breast into bite-size pieces, then mix with soy sauce, mirin, garlic powder, onion powder, white pepper, baking soda, oil, and cornstarch. Massage well and let it marinate.

While the chicken marinates, finely chop the smashed garlic, grate the ginger, and slice the green onions, keeping the white and green parts separate.

Make the lemon garlic sauce by combining soy sauce, oyster sauce, honey, mirin, lemon juice, chicken bouillon powder, lemon zest, water, black pepper, and cornstarch. Optionally add a splash of dark soy sauce for a deeper color.

Heat oil in a wok over high heat, spread the marinated chicken in a single layer, and sear about 1 minute until golden on the bottom. Flip and cook another 3-4 minutes until fully cooked and browned, then remove and set aside.

In the same wok, melt the butter over medium-high heat, then add the garlic, ginger, and white parts of the green onion. Stir for 1-2 minutes to infuse the aromatics into the butter.

Once the garlic turns lightly golden and fragrant, pour in the sauce and cook for about 30 seconds until thick and glossy.
