Malai Kulfi Ice Cream with Almonds and Cashews

A traditional Indian kulfi dessert made with milk, sugar, almonds, and cashews, cooked down to create a rich, creamy base that freezes into a smooth, malty ice cream.

Pour 1 liter of milk into a pot and add the sugar, almonds, and cashews. Stir well to combine.

Mix 1 teaspoon of custard powder with 1/4 cup of water until smooth. Custard powder provides good color, flavor, and thickness to the kulfi.

Pour the custard powder mixture into the milk and stir thoroughly to combine.

Cook on high heat for 5 minutes, then reduce to low heat and keep stirring until the mixture becomes thick and reduced.

Once the mixture reaches the desired consistency, turn off the heat and allow it to cool completely to room temperature.

Transfer the cooled mixture to a mixer jar and grind it until smooth and uniform.

Pour the ground mixture into kulfi molds or tea glasses, cover with foil or milk covers, and secure with a rubber band to prevent crystallization and maintain creaminess.

Make a small cut in the cover and insert an ice stick.

Place all the molds in the freezer for 8 hours until completely frozen.

Once frozen, dip the mold in warm water briefly, twist gently, and remove the kulfi.
