Steps

Wash and peel the sweet potatoes. Cut them into stick-sized pieces, about 1 pound in total weight.

Heat about 6 cups of cooking oil in a pot to between 340-350°F. Test the temperature with a wooden skewer—if bubbles form, the oil is ready.

Prepare the syrup: Heat 2 tablespoons of oil in a separate pan and add 1/3 cup of sugar. Cook on medium heat for about 3 minutes until the sugar begins to melt. Do not stir—instead, gently swirl the pan so the sugar melts evenly. The sugar should turn a beautiful golden-brown color.

Fry the sweet potato sticks in the hot oil for about 4 minutes until the outside turns deep brown and the inside is tender.

Remove the fried sweet potatoes and drain them. Turn off the heat briefly and let the oil temperature return to about 340°F.

Turn the heat back on to medium-high and fry the sweet potatoes again for about 2 minutes until they become extra crispy.

Quickly transfer the fried sweet potatoes into the hot syrup, sprinkle with black sesame seeds, and gently toss to coat evenly.

Pour the coated sweet potatoes onto a baking sheet lined with parchment paper. While still warm, separate any pieces that stick together. Let cool slightly before serving.
