Prepare the cabbage by cutting it in half lengthwise, then into quarters. Carefully remove the hard core portions from each piece. Chop the remaining cabbage into bite-sized pieces and set aside.

Heat the olive oil in a large pot over medium-high heat until it shimmers. Add the chopped onion and minced garlic, stirring until they soften, about a few minutes.

Add the sliced carrots, chopped celery, and prepared cabbage. Season with kosher salt and black pepper. Toss well and continue cooking for about 5 minutes until the cabbage begins to soften and reduce in volume.

Stir in the turmeric, cumin, coriander, and Aleppo pepper. Mix well to bloom the spices and release their aromas.

Pour in the canned diced tomatoes with their juice and the vegetable broth. Stir to combine all ingredients well.

Bring the soup to a boil for about 5 minutes, then reduce the heat to medium-low. Cover and simmer until all vegetables are tender.
