Place sliced red onions in a shallow dish. Add the juice of two lemons and a touch of olive oil. Mix well.

In another bowl, combine 10 minced garlic cloves. Add half a teaspoon each of allspice and paprika, a quarter teaspoon of cardamom, and a pinch of nutmeg.

Season with salt and pepper, then add a touch of extra virgin olive oil. Mix thoroughly to form a paste.

Place chicken thighs on a work surface. Using gloved hands, massage the spiced marinade all over each piece of chicken, ensuring even coverage. Add more olive oil as needed to help spread the mixture.

Transfer all chicken to the dish with the onion mixture. Toss everything together, ensuring every piece is well coated in the oil, lemon juice, and marinade. Add a final pinch of salt and pepper. Toss once more.

Cover and refrigerate for a couple of hours.

Prepare the dill yogurt sauce: Remove the thick stems from fresh dill, keeping only the tender fronds. Place the dill in a bowl.

Add one minced garlic clove and juice half a lemon or lime into the bowl.

Stir in 1¼ cups Greek yogurt and 1 tablespoon extra virgin olive oil. Optionally add a pinch of cayenne pepper. Mix everything together and season with salt to taste. Cover and chill until ready to serve.

Heat grill to medium-high. Place the marinated chicken on the grill. Optionally, grill the onions in a cast iron skillet alongside the chicken.

Cover and grill for 5 minutes.

Flip the chicken pieces over. Stir the onions to ensure even cooking. Continue grilling for another 3 to 5 minutes until the chicken is cooked through and nicely charred.

Remove the chicken and onions from the grill and arrange on a serving platter. Optionally garnish with chopped fresh tomatoes.
