Preheat the oven to 400°F. Place chicken thighs on a baking sheet, drizzle lightly with olive oil, and season both sides generously with salt and pepper.

Bake the chicken for about 25 minutes, until fully cooked (internal temp 165°F). Remove and shred or chop the chicken while still warm with two forks; set aside.

Heat a little olive oil in a skillet and cook the diced onion until soft and lightly golden, about 5 minutes. Add the sliced scallions and cook another 2-3 minutes until fragrant, then remove from heat.

While the pan is still warm, add the softened cream cheese and mix until it melts into the onion mixture.
