Blanch the pork bones in a pot of boiling water with ginger slices. Once the water returns to a boil, remove and discard the bones and water to cleanse them.

In a fresh pot, bring water to a boil. Cut the old cucumber into chunks and remove the center portions.

Add the blanched pork bones to the boiling water. Add dried scallops and dried oysters to create natural saltiness.

Add red dates and goji berries to balance the saltiness and provide sweetness and nutritional benefits.

Add the old cucumber last. Bring to a boil on high heat, then reduce to minimum heat and simmer for at least 90 minutes or longer (up to 3 hours for deeper flavours).

During cooking, add more water as needed to compensate for evaporation and maintain adequate liquid.

Once cooked, skim off any excess oil from the surface if desired. Taste the soup and add salt only if needed. Serve and enjoy with a touch of soy sauce if preferred.
