One-Pan Chicken Over Rice: New York Street Food Style

Cut the chicken into bite-sized pieces, mix with garlic, lemon juice, paprika, a bit of soy sauce, salt, and pepper, and let marinate for about 10 minutes.

In a separate pan, melt the butter and sauté the cumin seeds until fragrant.

Add the rice and stir well, then mix in turmeric powder (or curry powder) until evenly coated.

Pour in water and salt, bring to a light boil, then reduce to low heat and cover to cook for about 8 minutes.

Turn off the heat and let the rice steam for another 3 minutes, then fluff it up and set aside, keeping it warm.

In a clean pan, heat olive oil and cook the marinated chicken over medium heat until fully done.

In a bowl, combine mayonnaise, heavy cream, lemon juice, cilantro, and sugar, stirring well to make the sauce.
