A classic Chinese takeout-style orange chicken featuring double-fried chicken pieces coated in a crispy batter and tossed in a glossy sweet and tangy sauce made with fresh orange juice, orange squash, and aromatic spices.

Ingredients

Chicken breast~400-500 gest.
Potato starch~3 tbspest.
Salt~½ tspest.
MSG~¼ tspest.
White pepper~¼ tspest.
Egg white1
Oil for deep frying~800 mlest.
Chopped ginger~1 tbspest.
Garlic granules~2 tbspest.
Orange juice~150 mlest.
Orange squash~2 tbspest.
White vinegar

Cut chicken breast into chunks.

Mix together potato starch, salt, MSG, and white pepper to create a dry batter.

Coat the chicken pieces in the starch mixture and shake off excess.

Add egg white to the chicken and mix thoroughly to coat all pieces.

Return the egg white-coated chicken to the starch mixture and ensure all pieces are evenly battered.

Heat oil to 180°C (300°F) and deep fry the chicken until the outside is crispy and the internal temperature reaches 75°C or above.

Remove the chicken and let it rest for 5 minutes, then perform a second fry to remove excess moisture and achieve extra crispiness. (The second fry is optional.)

In hot oil, add chopped ginger, garlic granules, and MSG, and stir-fry until fragrant.

Add orange juice, orange squash, white vinegar, water, dark muscovado sugar, light soy sauce, and chili flakes (optional), and stir to combine.

Bring the sauce to a boil, then reduce heat and simmer until it thickens to a syrup consistency.

Add orange slices to the sauce and remove them once the sauce reaches the desired thickness.

Add the fried chicken to the orange sauce and continue to reduce over gentle heat until the sauce is thick and evenly coats the chicken.
