Poorana Poli (Indian Sweet Filled Flatbread)
A traditional Indian sweet flatbread filled with gram flour and jaggery filling. This is an easy-to-make classic dessert with a crispy exterior and sweet interior.

Prepare the dough: Mix maida, wheat flour, salt, and turmeric powder together. Add ghee and knead into a soft, smooth dough. Set aside.

Make the filling: Mix jaggery with warm water and strain to remove impurities. Heat ghee in a pan over medium flame, add gram flour, semolina, and cardamom powder. Stir continuously until the mixture becomes thick and golden.

Once the filling cools, take equal portions of dough and filling. Roll out the dough, place the filling in the center, and fold the edges to enclose it. Gently flatten into a round disc, ensuring the edges are tight and the filling doesn't leak.

Use a spatula to help turn the poli, or dust your hands with a little ghee to prevent sticking. Keep the edges thin and uniform so the filling stays inside.

Place butter paper on a flat surface, put the prepared poli on it. Gently slide it onto a hot tawa or pan from the paper.

Fry on a medium to low flame on both sides until fully cooked. Once the first side gets light brown spots, flip and cook the other side until the entire poli is cooked through.
