Thinly sliced pork (pork koma)
~400 g

For marinating the pork

Soy sauce

Potato starch (katakuriko)
For coating the meat
~3 tbsp

Salad oil
For shallow-frying
~3 tbsp

Soy sauce
For the sauce

Vinegar

Steps

Place the pork slices in a bag. Rub in the sugar evenly first, then add soy sauce and sake, mixing well to coat. Let it marinate for about 15 minutes.

After marinating, add potato starch and toss to coat each piece of pork evenly.

Pour salad oil into a frying pan and heat over medium heat for about 1 minute.

Lightly shape the meat into small balls and place them in the hot oil. Let them fry undisturbed until golden on the bottom.

After about 2.5 minutes, flip and fry the other side the same way until golden and cooked through, then remove from the pan.

Wipe out the excess oil from the pan, then add soy sauce, mirin, sake, vinegar, sugar, and grated garlic, stirring well to combine.

Heat the sauce over medium heat until it comes to a boil, then turn off the heat.

Return the fried pork balls to the pan and toss well to coat evenly with the sauce. Serve.
