Ingredients
Sliced pork belly
300 g
Onion
1 whole
Water
200 ml
Soy sauce
3 tbsp
Mirin
3 tbsp
Sake
2 tbsp
Sugar
2 tsp
Grated garlic
½ tsp
Grated ginger
½ tsp
Cooked rice
~2 cups

Vegetable oil
~1 tsp

Steps

Cut the onion in half. Slice one half against the grain into approximately 1 cm wide strips and discard the core. Grate the other half and set aside.

Cut the pork into bite-sized pieces by quartering each slice.

Place pork in a plastic bag, gently separate any clumps, and add grated onion, garlic, ginger, sugar, and sake. Massage thoroughly to combine.

Seal the bag and marinate in the refrigerator for 15 minutes.

Remove the marinated pork from the refrigerator and let it sit at room temperature for 15 minutes to bring it to room temperature.

Heat about 1 teaspoon of oil in a frying pan over medium heat for 30 seconds. Add the sliced onion and sauté until golden brown and fragrant.

Add the marinated pork with all its marinade to the pan and stir-fry until about 80-90% cooked.

Add water and mirin, stir well, bring to a boil, then reduce heat and simmer for 2 minutes.

Add soy sauce and continue simmering for about 3 minutes until the sauce reduces and the pork is tender and well-seasoned.

Serve the pork over hot rice and drizzle generously with the sauce to enjoy.
