In a large bowl, combine minced garlic, oregano, rosemary, paprika, salt, black pepper, Dijon mustard, olive oil, and white wine vinegar to make the Greek marinade. Whisk together until well blended.

Prepare the pork tenderloin by removing excess fat and silver skin from the surface. Pat the meat completely dry with paper towels.

Cut the pork tenderloin into approximately 1-inch cubes, making sure all pieces are as uniformly sized as possible for even cooking.

Place the pork cubes into the Greek marinade, ensuring every piece is thoroughly coated. Cover and refrigerate for at least 2 hours or overnight.

If using wooden or bamboo skewers, soak them in water for about 1 hour first. Thread the marinated pork pieces and red onion slices alternately onto the skewers. Reserve the remaining marinade for brushing during grilling.

Preheat the grill to medium-high heat. Place the skewers over direct heat and grill for approximately 4 to 5 minutes per side, rotating occasionally for even char marks. Brush with the reserved marinade during grilling.

Check the internal temperature to ensure the pork reaches 145°F (63°C) before removing from the grill. Tent the cooked skewers loosely with foil and let rest for about 5 minutes, allowing the meat to stay juicy while the temperature stabilizes.

Serve the grilled souvlaki hot. Enjoy it with pita bread, tzatziki sauce, tomato slices, red onion, and a sprinkle of paprika, or pair it with fresh Greek salads.
