Potato Croquettes

   Peel and remove any buds from the potatoes, then cut into small pieces. Soak in water for about 5 minutes to remove excess starch.

   Drain the potatoes. Mince the onion and combine with the ground meat.

   Add soy sauce, mirin, sugar, salt, and dashi powder to the meat mixture. Mix well.

   Place the potatoes in an oven-safe dish, then top with the meat mixture. Cover loosely with plastic wrap and microwave at 600W for 10 minutes.

   Check that the potatoes are soft with a skewer. Mash the entire mixture until smooth using a potato masher, then cover with plastic wrap and let cool.

   Make the batter: crack an egg into a bowl, add flour and water, and mix thoroughly.

   Shape the cooled potato mixture into patties or ovals, removing excess air. Coat with the egg batter.

   Heat the oil and carefully place the croquettes in to deep fry. Fry for about 2-3 minutes until golden brown on all sides, then remove with a slotted spoon.
