Slice the garlic thinly and remove the germ; chop the parsley; remove the seeds from the chili pepper and slice into rings; cut the bacon into 1cm-wide strips.

Drain the potatoes and loosely cover with plastic wrap. Microwave at 600W for 5 minutes (for 500W, add 10–20 seconds). Test with a bamboo skewer to ensure it pierces easily.

Remove the plastic wrap and wipe off surface moisture. Heat olive oil and garlic in a frying pan over medium heat until fragrant, then add the potatoes and cook until golden brown on all sides.

Add the bacon and sauté until browned, then add the chili pepper rings, salt, and mentsuyu. Toss everything together and finish by sprinkling with parsley.
