Freeze the rectangular puff pastry sheet in the freezer for 5 minutes to firm it up.

Cream together softened butter, golden cane sugar, and white sugar in a bowl until well combined.

Add vanilla extract and mix well.

Crack in the whole egg and mix thoroughly.

Add fleur de sel, baking soda, and flour, stirring gently until just combined.

Fold chocolate chips into the dough and mix lightly.

Place the cookie dough between two sheets of baking paper and roll it out with a rolling pin to the same rectangular size as the puff pastry.

Flip the cookie dough layer onto the puff pastry sheet.

Roll up the puff pastry tightly around the cookie dough, then freeze the roll for 5 minutes in the freezer.

Slice the roll into 1-centimeter-thick pieces with a sharp knife and arrange on a parchment-lined baking sheet, spacing them apart to allow for expansion.

Bake in a preheated oven at 180°C for about 18–20 minutes until the puff pastry edges puff up and the bottom is golden. If the puff pastry edges separate during baking, brush a bit of water to seal them together.
