Prepare the ingredients: beat 2 eggs with a pinch of salt. Slice half an onion thinly, slice 3 garlic cloves, and cut 2 green onions at an angle. If the Ho Fun noodles are not fresh, microwave them for about 15 seconds until soft enough to separate easily. Mix together the light soy sauce, dark soy sauce, and oyster sauce to make the sauce.

Heat the wok to high heat with oil, add the beaten eggs and scramble until cooked through. Remove and set aside.

Add a bit more oil and adjust heat to medium-high. Stir-fry the garlic until fragrant, then add the onion slices with a pinch of salt and cook for about 2 minutes until softened.

Increase heat to high, add the Ho Fun noodles, and stir-fry for about 1 minute using chopsticks until the noodles begin to change color and brown slightly.

Pour the sauce mixture over the noodles and stir well to coat evenly.

Add the scrambled eggs and bean sprouts back into the wok and stir everything together until well combined.

Garnish with green onions and drizzle with sesame oil, then plate and serve.
