Heat oil in a wok or large skillet over high heat, then reduce to medium-low. Add beaten eggs and scramble until just set, then remove and set aside.

Add a bit more oil to the wok, then add shrimp and garlic. Stir-fry for 2–3 minutes until the shrimp turns pink or becomes translucent (should be C-shaped, not O-shaped which indicates overcooking). Remove and set aside.

Add another small amount of oil to the wok, stir-fry the diced onion for about 1 minute until fragrant, adding a pinch of salt to help soften it. Then add the bean sprouts and toss gently to combine.

Add the rice to the wok and stir while breaking up any clumps. Cook for 2–3 minutes until the rice is heated through and begins to color. Drizzle soy sauce around the edge of the wok and stir to coat evenly.

Return the scrambled eggs and cooked shrimp to the wok and stir until well combined.

Add the oyster sauce and mix well until evenly distributed throughout the rice.

Finish by garnishing with green onions and optionally drizzle with sesame oil. Serve immediately.
