Slice the chicken breast against the grain into thin fillets of about 1 cm thickness.

Combine water, sugar, and salt in a plastic bag. Add the sliced chicken, massage gently to coat, place on a plate, and refrigerate for 1 hour.

Slice the onion thinly, spread it on a plate, and let it rest for about 10 minutes to allow air exposure.

Slice the lemon into thin pieces about 5 mm thick, then cut them in half.

In a small saucepan, combine water, sugar, mirin, and dashi powder over medium heat. Bring to a boil, then add vinegar, lemon juice, and soy sauce. Mix well and continue heating until small bubbles form around the edge, then remove from heat.

Place the rested onions in a container and pour the prepared marinade over them. Allow to cool to room temperature.

After 1 hour, pat the chicken dry with paper towels and coat evenly with cornstarch.

Heat sesame oil in a skillet over medium heat until hot, then reduce to low heat. Arrange the chicken pieces, cover with a lid, and cook for about 3 minutes.

Flip the chicken, remove the lid, and cook the other side for about 2 minutes over low heat until fully cooked.

Transfer the cooked chicken and lemon slices to the cooled marinade. Gently shake the container to distribute evenly, cover with plastic wrap, and refrigerate for 30 minutes before serving.
