Prepare the leg of lamb and trim excess fat as desired. Rub the entire leg with lemon juice.

Drizzle olive oil over the lemon juice and use your hands to rub both ingredients evenly all over the meat.

Season the entire leg generously with salt, rubbing it evenly all over to ensure full coverage.

Season all over with black pepper, making sure it is evenly distributed across the entire surface.

Sprinkle dry oregano all over the lamb, ensuring even coverage.

Make slits in the lamb with a knife and insert garlic slivers into the cuts throughout the meat, on both sides and various spots on the surface.

Distribute fresh rosemary leaves all over the lamb, covering the entire surface.

Arrange celery pieces in the bottom of a roasting pan and place the lamb on top.

Arrange carrot slices, onion quarters, garlic cloves, and bay leaves around and underneath the lamb.

Add 1 cup of water to the bottom of the roasting pan to help keep the meat moist and enhance flavor.

Place the roasting pan in a preheated oven at 135°F and roast for 1 to 1.5 hours, depending on desired doneness and personal preference.
