Whisk together eggs and milk with salt. Add sugar, sour cream, and flour, mixing until combined.

Flavor the batter with orange blossom water and orange zest.

Refrigerate the batter for at least 2 hours, or preferably overnight, to allow the gluten to develop and the mixture to absorb moisture.

Heat the oil to 375°F (185°C).

Heat the rosette iron in the oil for about 10 seconds, then remove excess oil.

Immediately dip the hot iron into the batter, ensuring the batter does not overflow the mold edge, or it will be difficult to remove.

Fry in the oil for about 10 seconds until the cookie releases easily from the mold.

Flip the iron and let the cookie fry for 5 more seconds in the oil.

Remove the cookie from the oil and drain it on paper towels.

Once cooled, dust the cookies generously with confectioners' sugar.
