Select an English or Persian cucumber and lightly scrape out some seeds if desired to reduce excess moisture. Slice the cucumber into thin strips and then chop into small, uniform pieces.

Select ripe but still firm Roma tomatoes. Quarter them, remove seeds, slice into strips, and then chop into small pieces.

Finely chop onions (red or yellow) to your desired amount, typically about one quarter to half cup.

If using green bell pepper, finely chop about half of one and add to the salad for extra crunch, though this is a modern variation rather than traditional.

Chop approximately half cup of fresh mint leaves (or substitute 1 teaspoon dried mint) and add to the salad. Mint is essential to this dish.

Optionally add about 2 tablespoons each of finely chopped fresh parsley and fresh dill, adjusting amounts to preference.

Season with kosher salt, black pepper, and sumac. Pinch salt from a height to ensure even seasoning. Though sumac is listed as optional, it is highly recommended.
