Steps

Finely dice the onion, mince the garlic, and slice the white part of the Chinese chives. Dice the tomatoes into chunks. Trim excess fat from the beef short ribs, cut into small pieces, and season with salt, black pepper, and mixed herbs.

Heat the trimmed beef fat in a pot over medium heat to render the fat. Remove some of the fat, leaving about half in the pot. Working in batches, sear the beef pieces until golden brown, then remove and set aside.

Add back the reserved beef fat and olive oil, then sauté the diced onion until fragrant. Add the sliced garlic chives and minced garlic, cooking until aromatic.

Return the beef and its juices to the pot, tossing with the vegetables. Add smoked paprika and chili powder, stirring well. Season with salt, black pepper, and mixed herbs.

Add the diced tomatoes and toss to combine well.

Pour the canned tomato sauce into the pot. Rinse the can with half a can of water, shake to combine, and add to the pot.

Add the Worcestershire sauce and gently stir to combine.

Reduce heat to low, cover the pot, and simmer for one hour.

Remove the lid and taste the braise, adjusting seasoning if needed. The tomato braised beef is now ready to serve.
