   Prep the ingredients: mince the 8 garlic cloves and set aside. Finely slice the fresh chili peppers if using.

   Wash and cut the water spinach: triple-wash the spinach and check for wilted leaves. Remove the less fresh ends. Lightly smack the hollow stems to help them cook evenly. Cut both stems and leaves into bite-sized pieces, keeping them somewhat separated so the leaves don't overcook.

   Heat the wok to medium heat and add the avocado oil (or other oil).
