Partially melt the butter in a microwave-safe bowl, then stir to finish melting. The butter should look milky rather than clear yellow and will be cool enough to work with the dough without chilling.

Mix in both sugars, then the egg yolk, vanilla, and salt. Scatter the flour and baking soda over the surface, mix until nearly incorporated, then fold in most of the chocolate chips, reserving some for topping.

Shape the dough into two discs about 1.5 cm thick. Bake at 190°C (170°C fan) for 13–14 minutes until the edges are golden and the center is pale gold. Top with reserved chocolate chips, cool on the tray for 10 minutes, then enjoy.
