Sizzling Tofu with Salted Fish

   Cut the egg tofu into 1.5–2 cm thick rounds and pat them dry. Heat oil to medium, checking temperature with a chopstick (bubbles rising rapidly indicate the oil is ready). Gently slide the tofu into the oil without moving them.

   Let the tofu develop a light golden-brown crust without moving it. After 1–3 minutes, gently turn the pieces to prevent sticking. Fry for another minute or so until the other side browns. Once all sides are golden brown, gently remove the tofu from the oil using a slotted spoon.

   Using the same oil at medium heat, briefly fry the red onion (separated into petals) and sugar snap peas for less than a minute to preserve their vibrant color. Remove and drain.

   Leave 2 tbsp of oil in the pan and fry the first batch of salted fish (rinsed, diced, 10 g) over medium-low heat for 2–3 minutes until crispy and fragrant. Set aside as garnish.

   Retain 1 tbsp oil and fry the second batch of salted fish (5–6 g, rinsed and diced) until brown, then add 100 g minced pork and stir until no red color remains (about 10–15 seconds).

   Add 3 cloves of chopped garlic, 5 g minced young ginger, and a few dashes of white pepper. Stir well and fry over medium or medium-low heat until fragrant.

   Add 200 ml water, 1 tbsp oyster sauce, ½ tbsp premium dark soy sauce, and ½ tsp sugar. Mix well and taste to ensure the seasoning is balanced.

   Add the fried tofu and 80 g drained canned baby corn. Let them braise briefly in the sauce over medium heat.

   Gradually add the cornflour slurry (1 tbsp cornflour mixed with 2 tbsp cold water) to thicken the sauce to a consistency that coats the tofu well.

    Add the fried onion and sugar snap peas, mixing everything together. Turn off the heat.

    Heat a hot plate (or small pan) until it smokes. Add a little oil, pour in 1 beaten egg, and turn off the heat to slightly set the egg.
