Slice the Spanish chorizo into thick rounds and place into a cold pan. Set over medium heat, spreading them out evenly. Cook for about 4 to 5 minutes, stirring occasionally, until they develop a golden crust and fat is rendered.

Remove the chorizo from the pan and set aside. Add sliced onions to the remaining rendered fat, season with salt and pepper, and cook over medium-high heat for about 6 to 7 minutes until caramelized with a nutty flavor.

Add minced garlic, sweet paprika, and smoked paprika to the onions. Reduce heat to medium and cook for about 1 minute, allowing the spices to bloom and the garlic to become fragrant.

Deglaze the pan with vinegar, stirring well to combine all flavors. Return the chorizo and any accumulated fat to the pan and cook for 1 more minute.

Turn off the heat, add most of the chopped parsley and a squeeze of fresh lemon juice. Mix well to combine all flavors and coat evenly.
