Ingredients
Chili peppers
~6-8 whole
est.
Minced garlic
~4-5 cloves
est.
Cooking oil
~3 tbsp
est.
Salted shrimp (or fish sauce, or salt)
Choose one for seasoning saltiness
1 spoon
Chicken stock powder or anchovy powder (optional)
Adds extra umami flavor
~½ tsp

Perilla oil
Add at the end for aroma

Steps

Finely chop the chili peppers using a knife or food chopper.

Add minced garlic and cooking oil, then sauté gently over low heat, being careful not to burn it.

Once the garlic and chilies smell fragrant, add salted shrimp (or fish sauce, or salt), seasoning it fairly salty — this is the key to great flavor.

If you have chicken stock powder or anchovy powder, add some for extra flavor, stir-fry briefly more, then turn off the heat.

Finally, stir in a drop of perilla oil to finish. Let it cool, then store in the fridge and enjoy anytime.

Serving idea 1: Boil pasta in salted water, drain, then stir-fry with a big spoonful of the chili relish and some olive oil to make spicy chili pasta.

Serving idea 2: Fry an egg, mix the chili relish into a bowl of rice, top with the egg, and wrap it in seaweed to eat.
