Prepare live crabs by washing thoroughly with a brush and removing any fishing line. Use the back of a knife to carefully remove the pointed claw tips to prevent pinching.

Remove the abdominal apron of the crab and open it up. Take out the gills and clean away the eyes and intestines using your fingers.

Cut the crabs in half. Gently crack the pre-broken areas using the back of your knife to help the seasoning penetrate better. Weigh out about 2 pounds of cleaned crabs.

Finely mince 12 large garlic cloves and about 1 tablespoon of fresh ginger.

In a bowl, combine 2/3 cup of soy sauce, 2 tablespoons of sugar, and red chili pepper flakes.

Add the prepared crabs to the seasoning sauce along with the minced garlic and ginger. Mix gently to distribute the seasonings evenly.

Sprinkle about 1 tablespoon of sesame seeds over the crab and mix gently.

Cover the container and refrigerate. The flavors will develop further overnight and the next day, making the dish even more delicious. The crab should be consumed within one week of preparation.
