Ingredients
Korean blood sausage (sundae)
Frozen, boil for about 10 minutes before use
1 lb
Flat rice cake (tteok)
About 85g, red rice cake made with gochugaru, soak in cold water for about 1 hour

Napa cabbage
4 oz
Onion
About half a cup

Green chili pepper
Can use one large or several depending on taste

Perilla leaves
Large leaves, cut in half then sliced thin

Minced garlic

Olive oil
For stir-frying
1¼ cups
Gochujang (Korean chili paste)
2 tbsp
Gochugaru (Korean chili flakes)
2 tbsp
Soy sauce
2 tbsp
Rice syrup
2 tbsp
Black pepper
½ tbsp
Water
Used to thin the sauce, added in two half-cup portions
1 cup
Perilla seed powder
Sprinkled at the end for flavor

Drizzled at the end for aroma

Sprinkled into the blanching liquid for seasoning

Steps

Boil the frozen sundae (blood sausage) in boiling water over medium heat for about 10 minutes until fully cooked, then remove and let cool.

Cut the red (gochugaru-colored) rice cake in half and soak in cold water for about 1 hour to soften.

Slice the napa cabbage, onion, green chili, green onion, and perilla leaves into bite-sized strips or pieces.

Mix gochujang, gochugaru, soy sauce, rice syrup, and black pepper together, then thin with one cup of water to make the stir-fry sauce.

Once the sundae has cooled slightly, cut it into thick slices similar to gimbap-sized pieces using a clean knife.

Heat olive oil in a pan and sauté the minced garlic until lightly golden and fragrant.

Add the napa cabbage and stir-fry a bit longer since it takes more time to soften.

Add the onion, green onion, and chili flakes, and stir-fry for about 2 minutes until fragrant.

Add the soaked rice cake and half of the cabbage, pour in the prepared sauce, and stir-fry until the rice cake softens and turns glossy.

Reduce to medium-low heat, gently add the sliced sundae, and stir carefully to coat with sauce without breaking the pieces.

Finally, add the sliced perilla leaves, sprinkle with perilla seed powder, drizzle with sesame oil, mix well, and remove from heat.

Plate and serve—perfect as a spicy side dish to enjoy with beer or soju.
