Brunch Recipe Idea: Spinach & Feta Quiche with Phyllo

Preheat the oven to 350°F (180°C).

Sauté the finely chopped onion in olive oil over medium heat for about 8 minutes until softened and golden.

Add the sliced scallions and cook for another 1–2 minutes until tender.

Add the spinach in batches, seasoning each batch with salt and pepper. Increase heat to medium-high to evaporate excess moisture as the spinach wilts.

Remove from heat. Stir in the crumbled feta cheese and roasted red pepper if using. Taste and adjust seasonings, then let cool.

In a bowl or small pitcher, whisk together the eggs and half and half. Season with salt, pepper, and nutmeg, then set aside.

Place a 9-inch tart pan or 9–10-inch pie pan on a baking tray. Brush the inside with melted butter and sprinkle breadcrumbs evenly on the bottom.

Layer the phyllo sheets into the pan, brushing or drizzling butter between each layer. Allow excess phyllo to hang over the sides.

Add the cooled spinach filling to the pan, sprinkle with shredded cheese, and pour the egg and cream mixture over the top.

Fold the overhanging phyllo edges inward to form a rustic crust. Brush the entire top with the remaining melted butter.

Bake on the center rack of the preheated oven for 45 minutes to 1 hour until the phyllo is golden brown and the filling is set.

Remove from the oven and let cool in the pan for at least an hour at room temperature. Carefully remove from the tart pan and transfer to a serving platter or cutting board before slicing.
