Boil the noodles until al dente, then drain and spread on a large baking tray.

Drizzle 2 tablespoons of oil over the noodles and coat evenly. Place in front of a box fan and stir with chopsticks for about 5 minutes while the steam escapes, until the noodles cool and dry out.

Prepare the seasoning sauce by mixing together 1 tablespoon light soy sauce, 1/2 tablespoon dark soy sauce, and 1/2 tablespoon oyster sauce. Set aside.

Prepare the dry seasoning mix by combining 1/8 teaspoon each of salt, MSG, five-spice powder, chicken bouillon powder, and cumin powder. Set aside.

Heat a wok or non-stick skillet over high heat and add 1 tablespoon of oil.

Add the prepared noodles to the hot pan, spread them out, and fry one side for about 1 minute until lightly browned, then flip and fry the other side for another minute.

Add the ham slivers and mix quickly.

Add the minced garlic and fresh chili, then mix again.

Add all the vegetables (onion, carrot, and bok choy), mixing well with a spatula and chopsticks.

Sprinkle the dry seasoning mix over the noodles, pour the seasoning sauce over everything (drizzle it to avoid burning on the hot wok surface), and stir-fry for another 2 minutes until well combined.

Turn off the heat and transfer to a plate. Optionally top with a fried egg.
