Prepare the yeasted batter by combining flour, sugar, instant yeast, warm water, egg, and salt. Mix well and let it rest for about an hour to allow the yeast to activate and the batter to bubble up.

Prepare the ricotta filling by mixing fresh ricotta with plenty of parmesan cheese, salt, and black pepper. Optional additions include stronger cheeses, anchovies, or a bit of salami for extra flavor.

Stuff the zucchini flowers by gently removing the small center piece from the tip of each flower, then fill the bottom with the ricotta mixture. Fold and seal the petals around the filling.

Heat oil to frying temperature. Carefully add the stuffed flowers to the hot oil and fry until golden brown on each side, about 2-3 minutes per side.

(Optional) If you have leftover baby zucchini, slice them thinly and mix into the remaining batter. Drop spoonfuls into the hot oil and fry until golden to make crispy zucchini fritters.
