This universal nam yum combines sweet, sour, salty, and spicy flavors in perfect balance. Once you master the basic dressing, you can create hundreds of different salads by simply varying the main proteins, vegetables, and fresh herbs.

Ingredients

fresh Thai chiliesif heat tolerance is low, scrape off the seeds and pith to reduce spiciness while keeping the chili flavor~2-3est.
garlicoptional; if using, must be pounded or grated finely~2-3 clovesest.
cilantro stemsoptional; no need to buy a whole bunch of cilantro just for this~¼ cupsest.
palm sugarmoisture from the chilies will help dissolve it~1-2 tbspest.
fish sauce~2-3 tbspest.
fresh lime juice~2-3 tbspest.

Pound fresh Thai chilies into a paste. If you prefer less heat, scrape off the seeds and pith first.

Add garlic if desired, making sure it is pounded or grated finely.

Add cilantro stems if desired, and pound together with the chilies and garlic.

Add palm sugar and continue pounding until all the sugar chunks dissolve. The moisture from the chilies will help dissolve it.

Add fish sauce and fresh lime juice.

Swirl or stir until all ingredients are well combined. The basic dressing is now ready.
