1
Chop up a 4 oz chocolate bar, using semi-sweet, milk chocolate, or baker's chocolate. Set aside.
2
Add the chopped chocolate and chocolate chips to a small bowl, stir in a small amount of pre-measured flour, and set aside.
3
In a large bowl, cream together sugar and eggs, whisking until light and pale in color, about 1 minute.
4
Add the melted vegetable oil and butter mixture (or all melted butter or all melted oil) along with vanilla extract, and whisk to combine.
5
Add the pre-measured dry ingredients (flour, baking powder, baking soda, and salt), making sure the leavening agents are evenly incorporated with the flour.
6
Add buttermilk and mix until just about fully combined, being careful not to overmix the batter.
7
Fold in the chocolate and flour mixture that was prepared earlier, mixing gently to combine.
8
Line a standard muffin tin with liners. Using a large ice cream scoop, fill each cup about three-quarters full. Sprinkle mini chocolate chips on top if desired.
9
Bake in a 425°F oven for 8 minutes, then reduce the oven temperature to 350°F and bake for an additional 7 minutes until golden and tender.
