Ingredients: 2 onions; 2 tbsp mustard oil; 1 tsp mustard seeds; 4 dried red chilies; 3-4 garlic cloves, finely chopped; 1 small piece ginger, finely chopped; 1 tin tin of cherry tomatoes (or canned chopped tomatoes, or fresh tomatoes); ½ tsp salt; ½ tsp chili powder; 1½ tsp curry powder; ½ tsp turmeric powder; 400 ml coconut milk; 700 g cod fillets and cod cheeks; ~2 tbsp coriander leaves (optional); ~1½ tbsp lemon juice; ~¼ tsp black pepper; ~300 g tenderstem broccoli (or greens of choice); ~2-3 sprays oil spray (optional, for greens)

A quick and straightforward Indian fish curry made with cod and cod cheeks, served with tender greens, aromatic and easy to prepare.

Finely chop two onions.

Heat the mustard oil in a hot pan until it starts to smoke.

Add mustard seeds and let them pop.

Add four dried red chilies, reduce to medium heat, and cook for 6-8 minutes until onions turn golden brown.

Add the finely chopped garlic and ginger, continue cooking for another 3-4 minutes.

Add a tin of cherry tomatoes (or canned chopped tomatoes, or 5-6 fresh tomatoes chopped), add a splash of water, cover and simmer for 15 minutes.

At this point, you may blend the mixture to a smooth puree if desired, or leave it textured as is.

Stir in salt, chili powder, curry powder, and turmeric powder.

Add the 400 ml coconut milk and some water, bring to a boil, then simmer for 5 minutes.

While the sauce simmers, prepare the cod by cutting fillets and cheeks into large pieces.

Add the fish to the simmering curry sauce, stir gently to submerge, and cook for 4-5 minutes until the fish is cooked through.

In the final minute, sprinkle with coriander leaves if desired and check that the fish is fully cooked.

Prepare the tenderstem broccoli by lightly spraying with oil, covering, and cooking on medium heat for 4-5 minutes until tender-crisp.

Season the finished curry with lemon juice, salt, and black pepper to taste.

Serve the fish curry with the cooked greens and rice.
