Create the preferment by combining yeast with sugar, then add the warm water and milk mixture (heated to 105-110°F). Stir gently and let rest in a warm place for about 45 minutes until bubbly and active.

Add bread flour, buttermilk, egg, and butter to the preferment. Sprinkle in salt and mix vigorously until a halfway-between-dough-and-batter consistency forms. Beat thoroughly to develop gluten, contrary to normal pancake methods.

Cover the dough and let it bulk ferment at room temperature for about 45 minutes until puffy. Divide into balls, gently pat into flat rounds, and loosely cover with plastic to prevent over-proofing.

Fry the bread rounds in butter until they develop a beautiful golden-brown crust on both sides with a pancake-like appearance and bun-like texture. Cool on a wire rack to prevent soggy condensation buildup.

Roast thick-cut bacon in the oven until nearly done. Brush lightly with maple syrup and return to the oven to caramelize. Cool and chop into smaller, bite-sized pieces.

Mix honey mustard with maple syrup to create maple mustard sauce. Combine well and set aside for spreading on the buns.

Season the ground beef with dried sage, garlic powder, onion powder, chili flake, salt, and black pepper. Form into 3 oz balls for smash burgers.

Toast the buns lightly in butter on both sides until golden. Cool on a wire rack to maintain crispness and prevent condensation.

Place beef balls in a hot oiled cast-iron skillet and cook until crusted. Butter a ring mold placed alongside the patties and carefully crack an egg into it for the sunny-side-up. Flip the patties and top each with one slice of American cheese.

Spread maple mustard sauce on both patties. Stack one patty on top of the other to meld the cheese together. Let the egg whites set.
