Preheat the oven to 350°F (160°C).

In a large bowl, combine the olive oil, Greek yogurt, egg, fresh lemon juice, sugar, and salt. Whisk together until smooth and well incorporated.

In another bowl, add the all-purpose flour. Gradually incorporate the wet mixture into the dry ingredients, whisking until it thickens. After adding about half the flour, switch to using your hands and gently work in the remaining flour, being careful not to overwork the dough to keep it tender.

Cover the dough with a clean kitchen towel and let it rest for 10–15 minutes.

In a mixing bowl, combine the crumbled feta cheese, Greek yogurt, beaten egg, dried oregano, freshly ground pepper, grated mozzarella cheese, and finely chopped fresh mint. Mix together using a fork until all ingredients are fully incorporated.

Divide the rested dough into two equal portions, then divide each portion into 8 smaller pieces for a total of 16 portions. Gently roll each piece into a ball, then flatten it into a 5-inch diameter circle using your fingertips or a rolling pin without adding extra flour.

Place a spoonful of cheese filling in the center of each dough circle. Fold the dough over and press down the edges with a fork to seal and create a decorative border.

Arrange the assembled cheese pies on parchment-lined baking sheets. They can be baked immediately or frozen for later use.

Whisk together 1 egg yolk and 2 tablespoons of milk to make an egg wash. Brush the tops of the pies with the egg wash and sprinkle sesame seeds over them if desired.

Bake for 20–25 minutes until the pies turn golden brown. Halfway through baking, rotate the trays by moving the bottom tray to the top rack and the top tray to the bottom to ensure even baking.

Remove the pies from the oven and let them cool for about 5 minutes until they are safe to handle but still warm. When cut into, you'll see the tender dough and stretchy melted cheese. Serve warm.
