Prepare the tomatoes by removing the core from 4 medium-sized ones and cutting them into wedges or chunks. Adjust the size based on your preference—smaller pieces for a thicker consistency, larger pieces for more broth.

Beat 4 large eggs in a small bowl with 1/4 teaspoon salt and a pinch of sugar, mixing well. Optionally add a pinch of MSG for restaurant-quality flavor.

Slice 1 to 2 green onions thinly, keeping the white and green parts separate. Reserve the white parts to infuse the oil and the green parts for garnish.

Make the sauce by mixing 1 teaspoon soy sauce, 1 teaspoon oyster sauce, and 1 teaspoon sugar in a small bowl, stirring well.

Prepare 2 tablespoons of water and 1 tablespoon of ketchup. In a separate bowl, combine 1/2 tablespoon cornstarch with 1 tablespoon water to make a slurry.

Heat 2 tablespoons of oil in a wok or pan over high heat. Pour in the beaten eggs and gently stir for about 45 seconds until they are 80% cooked (avoid vigorous stirring to keep the texture silky). Remove the eggs and set aside.

In the same wok, add 1 tablespoon of oil and heat over high heat. Add the white parts of the green onions and stir for about 1 minute to infuse the flavors into the oil.

Add the tomatoes, a pinch of salt, and the prepared sauce to the wok. Stir-fry for 1 to 2 minutes until the sauce slightly caramelizes on the hot surface, creating a rich umami flavor.

Add 2 tablespoons of water and 1 tablespoon of ketchup, stirring well. Simmer for another 1 to 2 minutes. The ketchup adds tanginess and sweetness to the dish.

When the tomatoes are cooked and the juices are bubbling, add the cornstarch slurry and stir for about 30 seconds to thicken the sauce.

Add the cooked eggs back into the wok and gently break them into smaller pieces. Mix everything together for about 1 minute.
